This course will provide skills in the area of food services and hospitality. These lessons are applicable to a capstone course in food service within a 3 seqence career pathway for Hospitality, Recreation and Tourism industry sector. The student receives training in kitchen safety and sanitation, equipment and facility use, knife skills, food preparation to include: cold pantry, salads, soups and sauces, introductory baking, meats and poultry, short order cook, hot-line, institutional cook, catering, cashiering, hostessing, waiter/waitress, and bussing. Students will participate in the planning, costing, preparation, serving, storage and critique of meals in project based learning. Nutrition and applied academic skills are incorporated in each unit. The design of concurrent distributed hardware systems is a major challenge for engineers today and is bound to escalate in the future, but engineering education continues to emphasize traditional tools of logic design that are just not up to the job. For engineers tackling realistic projects, improvised attempts at synchronization across multiple clock domains have long been a fact of life. Prone to hazards and metastability, these ad hoc interfaces could well be the least trustworthy aspects of a system, and typically also the least able to benefit from any readily familiar textbook techniques of analysis or verification.
Progress in the long run depends on a change of tactics. Instead of the customary but inevitably losing battle to describe complex systems in terms of their stepwise time evolution, taking their causal relationships and handshaking protocols as a starting point cuts to the chase by putting the emphasis where it belongs. This way of thinking may call for setting aside a hard earned legacy of practice and experience, but it leads ultimately to a more robust and scalable methodology.
Delay insensitive circuits rely on local coordination and control from the ground up. The most remarkable consequence of adhering to this course is that circuits can get useful things done without any clock distribution network whatsoever. Because a handshake acknowledgment concludes each interaction among primitive components and higher level subsystems alike, a clock pulse to mark them would be superfluous. This effect can bring a welcome relief to projects whose timing infrastructure would otherwise tend to create more problems than it solves.
The theory of delay insensitive circuits is not new but has not yet attracted much attention outside of its research community. At best ignored and at worst discouraged in standard curricula, this topic until now has been accessible only by navigating a sea of conference papers and journal articles, some of them paywalled. In dredging, trenching, (deep sea) mining, drilling, tunnel boring and many other applications, sand, clay or rock has to be excavated. This book gives an overview of cutting theories. It starts with a generic model, which is valid for all types of soil (sand, clay and rock) after which the specifics of dry sand, water saturated sand, clay, atmospheric rock and hyperbaric rock are covered. For each soil type small blade angles and large blade angles, resulting in a wedge in front of the blade, are discussed. For each case considered, the equations/model for the cutting forces, power and specific energy are given. The models are verified with laboratory research, mainly at the Delft University of Technology, but also with data from literature.

Developed by Kettering University through CAAT seed funding, Design with Aluminum is an introductory course focusing on students' learning of basics of engineering design, properties, manufacturing processes, design aspects and design guidelines along with several real life examples and applications of aluminum alloy materials commonly used in automotive and other applications. The topics will be covered using 'Blended learning' and 'Flipped classroom' approaches. Being an introductory course, only basics of engineering design, mechanical and physical properties, mechanics (stress-strain relationships), and manufacturing processes as applied to body design are introduced. Where applicable, a comparison between steel and aluminum is presented and discussed. Directed evolution has been used to produce enzymes with many unique properties, including altered substrate specificity, thermal stability, organic solvent resistance, and enantioselectivity--selectivity of one stereoisomer over another. The technique of directed evolution comprises two essential steps: mutagenesis of the gene encoding the enzyme to produce a library of variants, and selection of a particular variant based on its desirable catalytic properties. In this course we will examine what kinds of enzymes are worth evolving and the strategies used for library generation and enzyme selection. We will focus on those enzymes that are used in the synthesis of drugs and in biotechnological applications. This course is one of many Advanced Undergraduate Seminars offered by the Biology Department at MIT. Students demonstrate the erythrocyte sedimentation rate test (ESR test) using a blood model composed of tomato juice, petroleum jelly and olive oil. They simulate different disease conditions, including rheumatoid arthritis, anemia, leukocytosis and sickle-cell anemia, by making appropriate variations in the particle as well as in the fluid matrix. Students measure the ESR for each sample blood model, correlate the ESR values with disease conditions and confirm that diseases alter blood composition and properties. During the activity, students learn that when non-coagulated blood is let to stand in a tube, the red blood cells separate and fall to the bottom of the tube, resulting in a sediment and a clear liquid called serum. The height in millimeters of the clear liquid on top of the sediment in a time period of one hour is taken as the sedimentation rate. If a disease is present, this ESR value deviates from the normal, disease-free value. Different diseases cause different ESR values because blood composition and properties, such as density and viscosity, are altered differently by different diseases. Thus, the ESR test serves as a real-world diagnostic screening test to identify indications of the presence of any diseases in people.

Following the steps of the engineering design process, engineering teams use simple materials (cardboard and wooden dowels) to build and test their own turbine blade prototypes with the objective of maximizing electrical power output for a hypothetical situation—helping scientists power their electrical devices while doing research on a remote island. Teams explore how blade size, shape, weight and rotation interact to achieve maximal performance, and relate the power generated to energy consumed on a scale that is relevant to them in daily life.
